Moving on to cookies!!!  Gluten free + vegan + easy = fabulous and oh so delicious cookies!  Chocolate chip cookies are classic!  One would assume that a gluten free, plant based eater would not be able to have such a classic.  However, the great Karina has created the best cookie recipe and I just wanted to share it with you!  It can be difficult and headache inducing to search for new recipes, especially if these recipes are allergy-friendly!  So, look no further (at least for chocolate chip cookies) I have 'tested' this recipe as a gluten free mom and we totally love it!  I have made this recipe 3 times this month and every time it has come out perfect!  (and I am not very good with cookies so that is saying something!)  I have shared these cookies with lots of gluten-eating-carnivores as well and they have been very well received!  You will not be dissapointed!  So yummy!

In The Bag!!! (Thirty-One Giveaway!!!!)

Hello, hello!!!  I have recently discovered the best diaper bag!  I just love it and because Lori is so awesome, you can have one too!  As gluten free, plant-based eaters we must also carry around a lot of snackage in addition to the regular diaper bag goodies.  Soooooo, we will also be giving away my favorite thermal tote!  However, it does not stop there!  Lori has also offered free personalization!  We are just on fire today!!!!

I thought it would be fun to disclose the contents of my bag so you can see just how much I can fit into this fabulous carryall!  The best thing about this bag is that it is actually an 'Organizing Utility Tote' so it has multiple functions!  It would be a great bag if you don't yet have kids or if your kids are no longer in the 'diaper bag' stage!  It would be a really fab beach tote as well!  The 'Thermal Tote' is great for anything you may need to keep hot or cold and tucks quite nicely inside the utility tote!  So here it is....

Thirty-One's Organizing Utility Tote:
I like details, so I will give some to you now!  The Organizing Utility Tote has 5 outside fabric pockets and 2 mesh pockets.  The inside is completely open and does not have any zippers or pockets.  (I use a purse organizer inside mine for all the little things!)

Thirty-One's Thermal Tote:

The Thermal Tote has a zipper top and a pocket on the outside.  The inside is open.

A Watched Pizza Never Broils!

It's hot, yes?  Even when the air is on, I do not want to turn on the oven!  I'm not going to order out either.  But I want pizza!  Dilemma?  Not anymore!!!

My new favorite pizza!

This pizza is my new favorite for two reasons:  1.  Super simple  2.  Incredibly delicious!

Gluten Free Tortilla Pizza (can also be vegan)
-Gluten free tortilla of choice (Brown rice gets nice and crispy!)
-tomato paste
-toppings *my favorite are goat cheddar, pineapple, peppers, could use anything!

*Place tortilla on lightly oiled baking sheet sprinkled with sea salt.  Spread tortilla with tomato paste and add toppings.  Be careful not to overload the tortilla or it will not get crispy!  Broil on high for about 8 minutes or until the edges start to curl and get brown.

We love it!!!!  We have used a lot of different combinations and they all work just fine!  This is a great way to hide veggies too!  I very, very finely chop bell pepper and zucchini for my toddler and add to her sauce.  I have also used Daiya cheese with great results!  Whatever you like!

If you want a slightly thicker crust you can use two tortillas.  For this option you just spread a very thin layer of sauce between the two tortillas then stack.  Load the top per recipe above and broil to perfection!
